The software (OS X and Windows both ok) grabs the data off the iPhone (also iPod Touch), performs the upgrade with the Jailbreak, installs Installer.app and SSH.app, and reloads it back to your unit. The whole process takes up about 10 minutes or so. Once you're done, you have a fully updated v1.1.2 jailbroken iPhone system.
Yes, you must downgrade to v1.1.1 if you have an iPhone with v1.1.2 in it. This includes any iPhone bought after Nov.8 2007. The jailbreakme.com webpage has been updated with v1.1.2 details. This procedure is only for iTunes-activated iTunes and iPod touches--"hactivated" iPhones need not apply. That's because once you upgrade to v1.1.2, you need an iPhone that's activated before running the jailbreak v1.1.2 program.
